Ingredients:
1 Tablespoon canola oil
4 6-ounce boneless, skinless chicken breasts, cut into 1-inch pieces

Halibut with Lentils and Mustard Sauce
Real Simple
Ingredients:
2 Tbsp EVOO
1 large onion, chopped
2 cloves garlic, chopped
1 medium sweet potato, peeled and cut into 1/4-inch pieces
2 1/2 cups low-sodium chicken broth
1 3/4 cups green lentils, rinsed (1/2 pound)
Kosher salt and black pepper
4 6-ounce pieces of halibut filet
1/4 cup Dijon mustard
1/4 cup dry white wine
1 Tbsp chopped fresh tarragon
Preparation:
Heat 1 Tbsp of the oil in a large saucepan over medium heat. Add the onion and cook, stirring occasionally, until softened, 5 to 6 minutes. Add the garlic and sweet potato and cook, stirring, for 1 minute. Add the broth and lentils and simmer, covered, until the lentils are tender, 20 to 25 minutes. Preparation:
In a 4-6 quart slow cooker, combine the soy sauce, sugar, vinegar, garlic, ginger and red pepper. Add the short ribs and carrots and arrange in a single layer. Lay the cabbage on top. With a large spoon or ladle, skim the fat from the cooking liquid and discard. If the slow cooker is on the low setting, turn it to high. Combine bell peppers, 2 teaspoons chile paste with garlic (such as sambal oelek), 1/2 teaspoon paprika, and 1/8 teaspoon ground red pepper in a food processor; pulse until smooth. Transfer pepper mixture to serving bowl; stir in Traditional Hummus. Yield: 4 cups

Greek Yogurt

1 gallon whole milk
**1 1/2 pint heavy whipping cream
**1/2 single-serving container of plain yogurt [not vanilla flavored]
cheesecloth
Bring milk and cream to a slow boil, stirring constantly. [It will take some time b/c of the quantity, so keep an eye on it so it doesn't burn.] Remove from heat and let it cool to room temperature. Preheat over to lowest setting. In a separate bowl, temper the yogurt with approx. 3 cups of the milk mixture. Add this to the larger milk mixture. Place pot with milk mixture uncovered into warm oven. Turn over off after you place the pot inside. Let sit overnight. In the morning the end product is a thin yogurt. Strain with cheesecloth to create the "Greek" consistently - it is worth the time, believe me. Drizzle with honey and enjoy with some crusty bread. Yum!

Beer-Can Pot Roast

Ingredients:
3 lbs beef chuck, in chunks
Salt and pepper
Olive oil
Beer
Carrots and onions, chopped
Parsley (3 sprigs)
Preparation:
Generously season the beef with salt and pepper.
Over medium flame, heat enough olive oil to evenly coat the base of a large heavy-bottom pot. When the oil is hot, add the beef and cook on all sides until it is evenly brown and crispy. Remove and place on a plate, uncovered.
Pour in a bit of beer, let simmer, and scrape up the tasty brown bits with a wooden spoon. Add the vegetables. Use enough to make a deep bed, maybe two large onions and three big carrots--it all depends how big the pot is. You can also add unpeeled garlic; fennel and ginger are a nice touch with pork. Cook on low flame, stirring occasionally, for a bout 45 minutes, till well carmelized.
Preheat the oven to 350 degrees.
Place the beef back in the pot, nestled among the vegetables. Add the parsley. Pour in the rest of the beer so it comes about halfway up the sides of the meat. You may need more than one can.
Cover, place in the oven, and cook for two to three hours, until the meat is meltingly tender.
Remove the meat, place on a plate, and cover with aluminum foil. Pour the cooking liquid through a mesh strainer and discard the vegetables. At this point, you can serve the liquid as is, or you can put it back on the stove in a smaller pot over medium heat to intensify flavors.
To serve, keep the meat in chunks or shred it, and place on a platter. Pour some of the cooking liquid over it (serve the rest on the side). Pair it with buttered egg noodles or mashed potatoes or pureed celery root. Devour.

Jeanne's Famous Pesto
2 Cups basil leaves
2/3 cups pine nuts
3 garlic cloves
2/3 cup olive oil
1-2 cups grated parmesan (preferrably Parmigiano-Reggiano)

1 cup pitted Kalamata olives, or other brine-cured olives
1 cup fresh basil leaves
1 tablespoon freshly squeezed lemon juice
½ cup mayonnaise
Directions
Blend all ingredients except mayonnaise in processor until finely chopped. Transfer to small bowl. Mix in mayonnaise. (Can be prepared 3 days ahead. Cover and refrigerate.)
I also like to add a bit of Dijon mustard
Serve with Crostini:
Slice a baguette on the diagonal, spray with olive oil, toast in 425o oven about 5 minutes, until crisp.

1 tsp black pepper
1 cup grated mozzarella
1/2 cup ricotta
1/2 cup parmesan or asiago
Directions:
Preheat oven to 350. Cut the head of cabbage in half. Peel back theleaves, trying to keep them intact. Micowave cabbage leaves in largebowl for 5-10 minutes or until soft. Set aside.Put the olive oil in a large skillet over medium-high heat. Saute thegarlic, onion, and portobello mushroom until the onion is translucent.Add the ground meat and brown thoroughly. If water or fataccumulates, drain. Add the tomato paste, tomato sauce, andseasonings to the pan. Mix well.Coat a 9 x 13 x 2 inch baking pan with a little olive oil. Whisk together the goat cheese, apple cider vinegar, olive oil and lemon juice, salt and pepper; add shredded butternut squash and dried cranberries. Serve all with bread and butter pickles!

Brown the onion in the olive oil, then add ground turkey. When cooked, add all of the remaining ingredients. Warm and serve on toasted buns - the taste was incredible. Loved it and the cayenne gave it a little "bite".

Shepherd's Pie
30 minute meals by rachel ray
Ingredients:
2 pounds potatoes, such as russet, peeled and cubed
2 tablespoons sour cream or softened cream cheese
1 large egg yolk
1/2 cup cream, for a lighter version substitute vegetable or chicken broth
Salt and freshly ground black pepper
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 3/4 pounds ground beef or ground lamb
1 carrot, peeled and chopped
1 onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef stock or broth
2 teaspoons Worcestershire, eyeball it
1/2 cup frozen peas, a couple of handfuls
1 teaspoon sweet paprika
2 tablespoons chopped fresh parsley leaves
Preparation:
Boil potatoes in salted water until tender, about 12 minutes. Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk and cream. Add the cream mixture into potatoes and mash until potatoes are almost smooth.
While potatoes boil, preheat a large skillet over medium high heat. Add oil to hot pan with beef or lamb. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. Sausage with Cabbage and Corn Saute
Ingredients:
2 Tbsp olive oil
8 Italian sausages (about 1 1/2 pounds)
1/2 small head red cabbage, thinly sliced (about 6 cups)
1 large onion, thinly sliced
1/4 cup balsamic vinegar
1 cup corn kernels (from 2 ears or frozen and thawed)
kosher salt and pepper
Preparation:
Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Prick the sausages with a fork and cook, turning occasionally, until browned, 10 to 12 minutes. Transfer to plates.
Heat the remaining oil in the skillet over medium heat. Add the cabbage and onion and cook, stirring occasionally, for 5 minutes. Add the vinegar and cook, stirring occasionally, until the cabbage is just tender, 3 to 4 minutes.

2 tablespoons balsamic vinegar
2 tablespoons honey
1 clove garlic, peeled
¾ teaspoon salt
¾ teaspoon freshly ground black pepper
¾ cup extra-virgin olive oil
10 to 12 ounces pre-washed spinach
Preparation:
Preheat the oven to 350 degrees F.
Place the prosciutto slices on a baking sheet and bake until just crisp, about 10 minutes. Let cool. Crumble the prosciutto slices into a container and store in the refrigerator. In a blender, combine the orange zest, orange juice, balsamic vinegar, honey, garlic, salt, and pepper. Blend until smooth. With the blender running, add the olive oil in a steady stream until combined. Transfer to a container and store in the refrigerator.
To serve, put the spinach in a large bowl. Toss with enough of the vinaigrette to coat the spinach. Sprinkle with the crisp prosciutto crumbles, toss again, and serve.

Thai-Style Halibut with Coconut-Curry Broth

2 cups low-sodium chicken broth
½ cup light coconut milk

Steamed spinach**
½ cup coarsely chopped fresh cilantro leaves
2 scallions, green part only, thinly sliced
2 tablespoons fresh lime juice

In a large saute pan, heat the oil over moderate heat. Add the shallots and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Then cut the sun dried tomatoes slices in half and spread on top of the goat cheese. Remove from oven when oil starts to boil. Approximately 15 minutes.

1 Tbsp roasted garlic
2 Tbsp white miso
1 cup apricot jam
1 Tbsp EVOO
1 cup sake
1 cup soy sauce
White pepper

Preheat broiler. Mix all ingredients (except fish & pepper) in sealable container, checking for flavor, and tweaking as desired. Put fillets in marinade and let sit 30 minutes. After marinating, place fillets in an oiled shallow pan. Sprinkle with white pepper and pour remaining marinade over. Broil 10-12 minutes.

Step One:
Mix the following ingredients on a stove set on medium heat for 12 minutes:
1 cup evaporated milk
1 cup sugar
3 beaten egg yolks
1/2 cup butter
1 teaspoon vanilla
Step Two: Adding Coconut and Pecans
Once you are done stirring in the above ingredients add the coconut and roasted pecans. To roast pecans, put one cup of pecans in the microwave for one minute. Take them out and turn over a few times with your hand, then put them back in for another minute. The second time you take them out if they don't look done put them in for another minute. Cut pecans into fourths.
Step Three: Cooling Frosting
Cool the frosting until it is firm and easy to spread.
Step Four: Spreading on Frosting
To frost the cake divide the frosting into three separate, but equal parts. If you made a double batch make sure you divide your frosting in half before doing this. Then pour one of the thirds onto the first layer, or as much as needed to frost the top so that the top is completely covered.
Step Five: Putting on next Layer
To add other layers carefully slide them onto the last frosted one.
Step Six: Putting on More Frosting
Repeat with next two layers.
Step Seven: Frosting Sides
Unlike some cakes this one does not need instructions on how to frost the sides. All I can say is just slap it on and make it stick. It does not need to be perfectly smooth. Refrigerate the cake for some time after frosting to keep the frosting from sliding off. After this, you shouldn't have to refrigerate it.

German Chocolate Cake
Ingredients:
Cake
1 (4-oz.) package of Baker's Sweetened Chocolate
½ cup boiling water
1 cup butter or margarine
2 cups sugar
4 egg yolks
4 eggs whites
1 teaspoon Vanilla
2 ½ cups sifted cake flour
1 tsp baking soda
½ tsp salt
1 cup buttermilk
Preparation:
Step One: Melting Chocolate
Take one package of Baker's sweetened chocolate and mix it with 1/2 cup of boiling water. You are done mixing the chocolate once it is all dissolved (as seen in the lower left picture). Let this cool before adding it to the mixture in step four. You will want to go ahead and preheat the oven to 350F so it will be ready when you need it.
Step Two: Mixing Butter
Mix 1 cup of butter with 2 cups of sugar until they are fluffy and rich. This should not take but a few minutes.
Step Three: Add Egg Yolks
Slowly add in your egg yolks while beating the mixture. Once no more streaks, or spots of yellow remain they have been mixed in well enough.
Step Four: Add Melted Chocolate
Add Chocolate liquid and 1 teaspoon vanilla after the egg yolk is completely mixed in to the batter.
Step Five: Sift Flour
It is important to sift the flour in order to remove all the lumps. This is the time when you add 1 teaspoon of baking soda and 1/2 teaspoon of salt to the flour. You may want to do step nine now so that you don't have your cake batter sitting out of the oven too long.
Step Six: Adding Milk and Flour
Add the milk and flour to the mixture at the same time, but alternating between the two (milk, flour, milk, flour...) Don't stop mixing as you do this. Once you are done beating in the milk and flour, make sure that it is smooth.
Step Seven: Beating Egg Whites
If you have never beaten egg whites before; it can be tricky, so pay close attention.
Take your four egg whites and beat them at a high speed. When you lift the beater out of the bowl it should have a peak, or pointed tip at the end of it. This means they are done being whipped. They should look exactly like the ones in the lower left picture of this step. This process should take about 5 minutes. You will want to move quickly on to the next step to keep the egg white fluffy. Make sure that there is no egg yolk mixed into your egg whites.
Step Eight: Fold in Egg Whites
Now fold in your egg whites SLOWLY. DO NOT STIR OR BEAT THEM IN!! This would ruin the cake!
Step Nine: Cutting Wax-Paper
Use a knife, or a pen to mark a sheet of wax paper around the exterior of the pan. Then cut on the line you just drew. Coat the inside of the pan with shortening. Then put flour on the inside and shake it till the sides and bottom are covered with flour. Then put the cut wax paper in the bottom of the pan.
Do this for each of the three cake pans.
Step Ten: Pour Cake Batter
Pour equal amounts of batter into each 8 inch cake pan.
Step Eleven: Baking German Chocolate Cake
Put the cakes in the oven for 30 to 40 minutes. Do not open the oven until the cake has been in for the required time, if you do it will fall in the middle. Stick a tooth pick in your cake after baking. If it comes out clean your cake is done, if it comes out gooey then it needs another five to ten minutes.
Step Twelve: Cake Flipping
Once your cake layers have cooled for 15 minutes you will need to remove them from their cake pans. Using a knife, or a spatula like the one seen in the picture to the left, cut the cake away from the sides of the cake pan. Then flip it over on a cooling rack and remove the wax paper from the bottom.

1 tsp baking soda

Preparation:
Step One: Melting Chocolate
Take one package of Baker's sweetened chocolate and mix it with 1/2 cup of boiling water. You are done mixing the chocolate once it is all dissolved (as seen in the lower left picture). Let this cool before adding it to the mixture in step four. You will want to go ahead and preheat the oven to 350F so it will be ready when you need it.
Step Two: Mixing Butter
Mix 1 cup of butter with 2 cups of sugar until they are fluffy and rich. This should not take but a few minutes.
Step Three: Add Egg Yolks
Slowly add in your egg yolks while beating the mixture. Once no more streaks, or spots of yellow remain they have been mixed in well enough.
Step Four: Add Melted Chocolate
Add Chocolate liquid and 1 teaspoon vanilla after the egg yolk is completely mixed in to the batter.
Step Five: Sift Flour
It is important to sift the flour in order to remove all the lumps. This is the time when you add 1 teaspoon of baking soda and 1/2 teaspoon of salt to the flour. You may want to do step nine now so that you don't have your cake batter sitting out of the oven too long.
Step Six: Adding Milk and Flour
Add the milk and flour to the mixture at the same time, but alternating between the two (milk, flour, milk, flour...) Don't stop mixing as you do this. Once you are done beating in the milk and flour, make sure that it is smooth.
Step Seven: Beating Egg Whites
If you have never beaten egg whites before; it can be tricky, so pay close attention.
Take your four egg whites and beat them at a high speed. When you lift the beater out of the bowl it should have a peak, or pointed tip at the end of it. This means they are done being whipped. They should look exactly like the ones in the lower left picture of this step. This process should take about 5 minutes. You will want to move quickly on to the next step to keep the egg white fluffy. Make sure that there is no egg yolk mixed into your egg whites.
Step Eight: Fold in Egg Whites
Now fold in your egg whites SLOWLY. DO NOT STIR OR BEAT THEM IN!! This would ruin the cake!
Step Nine: Cutting Wax-Paper
Use a knife, or a pen to mark a sheet of wax paper around the exterior of the pan. Then cut on the line you just drew. Coat the inside of the pan with shortening. Then put flour on the inside and shake it till the sides and bottom are covered with flour. Then put the cut wax paper in the bottom of the pan.
Do this for each of the three cake pans.
Step Ten: Pour Cake Batter
Pour equal amounts of batter into each 8 inch cake pan.
Step Eleven: Baking German Chocolate Cake
Put the cakes in the oven for 30 to 40 minutes. Do not open the oven until the cake has been in for the required time, if you do it will fall in the middle. Stick a tooth pick in your cake after baking. If it comes out clean your cake is done, if it comes out gooey then it needs another five to ten minutes.
Step Twelve: Cake Flipping
Once your cake layers have cooled for 15 minutes you will need to remove them from their cake pans. Using a knife, or a spatula like the one seen in the picture to the left, cut the cake away from the sides of the cake pan. Then flip it over on a cooling rack and remove the wax paper from the bottom.
Miso-Glazed Eggplant
Ingredients:
6 Tbsp shiro miso* (white fermented soybean paste)
3 Tbsp rice vinegar (not seasoned)
1 ½ Tbsp water3

1 Tbsp finely grated peeled fresh ginger
2 Tbsp vegetable oil plus additional for brushing pan

Preheat broiler.

4 cloves garlic, smashed

Preparation:
Heat oven to 350 degrees. In a medium Dutch oven, combine the oil, lemon juice, onion, thyme, garlic, ¼ cup water, 1 ½ teaspoons salt, and ¼ teaspoon pepper. Trim the top and bottom of each artichoke. Using scissors, snip the tip off each leaf. Cut the artichokes into quarters and scoop out the fuzzy chokes. Toss the artichokes in the oil mixture. Chocolate Peanut Butterscotch Cookies
Ingredients:
½ cup sugar
½ cup firmly packed brown sugar
½ cup unsalted butter, room temperature
½ cup creamy peanut butter
1 teaspoon vanilla extract
1 egg
1 ¼ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
1 cup (6-ounce package) butterscotch morsels
Granulated sugar, for tops of cookies
Chocolate sauce, for dipping
Preparation:
Preheat oven to 375 degrees.
In a large bowl, combine sugar, brown sugar and butter. Beat with an electric hand mixer until fluffy. Add the peanut butter, vanilla and egg, blend well. Add the flour, baking soda and salt to dough mixture and mix well. With a wooden spoon or rubber spatula, stir in butterscotch chips. Take small dollops of dough and shape, with your hands, into 1-inch balls. Place 2 inches apart on a cookie sheet. Make sure that the cookies are at least 2 inches apart from each other because they will spread. Dip a fork into sugar and flatter the balls lightly with the fork in a crisscross pattern. 2 lb large shrimp in shell, peeled, leaving tail fan attached
For chutney:

Ingredients:

4 Tbsp red wine vinegar, divided
2 med zucchini or summer squash (about 9 oz total), cut lengthwise into ¼” thick slices
1 red or yellow bell pepper, quartered
3 Tbsp purchased pesto
2 Tbsp fresh lime juice
1 pound uncooked large shrimp, peeled, deveined
2 heirloom tomatoes (8 to 10 oz total), cored, cut into ½” cubes (about 2 cups)
½ cup thinly sliced fresh basil
leaves plus sprigs for garnish
1 8-ounce ball fresh mozzarella cheese, cut into ½” cubes
Preparation:
Cook orzo in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain. Rinse with cold water; drain well. Transfer to large bowl and toss with 1 tablespoon oil.
Prepare barbecue (medium-high heat). Whisk 2 tablespoons oil and 2 tablespoons vinegar in small bowl. Brush zucchini and bell pepper with oil mixture, then sprinkle with salt and pepper. Whisk pesto, lime juice, remaining 3 1/2 tablespoons oil, and remaining 2 tablespoons vinegar in small bowl for pesto vinaigrette. Place shrimp in medium bowl. Add 2 tablespoons pesto vinaigrette; toss to coat. Grill zucchini and bell pepper until crisptender, about 3 minutes per side for zucchini and 4 minutes per side for bell pepper. Transfer to work surface. Sprinkle shrimp with salt and pepper; grill until charred and cooked through, 2 to 3 minutes per side. Place shrimp in bowl with orzo. Chop zucchini and bell pepper; add to bowl with orzo. Add remaining vinaigrette, tomatoes, sliced basil, and mozzarella; toss to combine. Season to taste with salt and pepper. 4 oz semisweet chocolate, chopped
1 stick unsalted butter, cut into pieces
1 cup water
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups sugar
2 large eggs
1 teaspoon vanilla
For frosting:
1 1/2 cups sugar
1 cup heavy cream
4 oz unsweetened chocolate, chopped
1 stick unsalted butter, cut into pieces

Preparation:
Preheat oven to 350º. Heat olive oil in a large Dutch oven over medium-high heat. Sprinkle chuck roast with salt and pepper. Add roast to pan; cook 5 minutes, turning to brown on all sides. Remove roast from pan. Add onion to pan; sauté 8 minutes or until tender.

1/3 cup EVOO
1 clove garlic, sliced
1 cup (2 oz) walnuts, roughly chopped
2 teaspoons lemon juice

½ cup fresh flat-leaf parsley, chopped
¼ cup grated Parmesan
Preparation:
Cook the ravioli according to the package directions. Drain, reserving 3 tablespoons of the cooking water. Heat the oil in a medium skillet over medium heat. Add the garlic and walnuts. Cook, stirring, until the nuts are lightly toasted and fragrant, about 5 minutes. Stir in the lemon juice, ½ teaspoon salt, ¼ teaspoon pepper, the parsley, and the reserved cooking water. Add the ravioli and toss to coat. Divide among individual plates and sprinkle with Parmesan.

Cook, stirring, until the nuts are lightly toasted and fragrant, about 5 minutes. Stir in the lemon juice, ½ teaspoon salt, ¼ teaspoon pepper, the parsley, and the reserved cooking water. Add the ravioli and toss to coat. Divide among individual plates and sprinkle with Parmesan.
Substitution: For a hint of vegetables, use pumpking or butternut-squash ravioli instead of cheese-filled. You can also replace the walnuts with pecans or almonds.

Ingredients:
1 Tbsp butter, plus 6 Tbsp melted, plus 5 Tbsp melted
1 package (7 oz) shortbread cookies
3 eggs, lightly beaten
1 cup sugar
¼ tsp salt
1 cup dark corn syrup
3 oz. unsweetened baking chocolate, coarsely chopped
1 cup pecan halves

Preheat oven to 375 degrees. Grease a 9” pie plate with 1 tablespoon butter. Place the shortbread cookies in a food processor, and pulse until they are fine crumbs. Add 6 tablespoons melted butter, and pulse a few times to combine. Transfer mixture to the pie plate, and press firmly and evenly to form a crust. Place the plate in the freezer for 5-10 minutes. ½ cup all-purpose flour
2 ½ cups low-sodium chicken broth

Strain the pan drippings into a fat separator or large measuring cup. Let stand for 10 minutes. Skim and discard the fat from the surface. Place the empty roasting pan over 2 burners over medium-high heat. Add the wine and cook for 2 minutes, stirring and scraping to dissolve any bits stuck to the pan. Remove from heat and pour into the cup with the pan juices. Melt the butter in a large skillet over medium heat. Sprinkle with the flour and cook, stirring constantly, until golden brown, about 5 minutes. Still stirring, slowly add the broth, then the reserved pan juices. Bring to a boil, reduce heat, and simmer until thickened, about 10 minutes. Remove from heat and stir in 1 teaspoon salt and ½ teaspoon pepper.
Variations:

Season the fish with ¼ teaspoon salt and ¼ teaspoon pepper and cook until opaque, about 4 minutes per side. Divide among plates. Wipe out the skillet and heat the remaining oil over medium heat. ½ cup dry mustard
½ cup white vinegar
1 egg yolk
Preparation:

1 ½ tsp unsweetened cocoa
Preparation:
In large mixer bowl, combine cheese, sugar, whipping cream, rum and vanilla. Beat until smooth and creamy. Arrange 1 ½ packages ladyfingers, cut side down, in bottom of 9x13” glass baking dish. Pour half of coffee over ladyfingers. Spread half of cheese mixture over ladyfingers. Sprinkle half of nuts and half of cocoa over cheese. Arrange remaining ladyfingers over cocoa; sprinkle with remaining coffee and layer with remaining cheese, nuts and cocoa. Refrigerate, covered, several hours or overnight. To serve: Carefully scoop down through all layers; serve in sorbet dishes or on dessert plates.

½ tsp. cayenne pepper

5 cups chopped onions (about 3 lg)
2 cups chopped celery
8 cups diced cored Granny Smith Apples
1 Tbsp Sage
2 tsp dried thyme
1 tsp allspice
5 ½ cups herbed cubed stuffing mix (about 10 oz)
1/3 cup chick broth
¼ cup marsala
Preparation:

1 ½ Tbsp dry rubbed sage 2-14 oz cans low salt chick broth
1 Tbsp sea salt ½ cup applejack (at liquor store)
2 lg garlic cloves, pressed ¼ stick butter
1 tsp dried thyme 1 cup finely chopped onion
¾ tsp allspice 2 Tbsp flour
6 ½ to 7 lb. crown roast 1/3 cup Dry Marsala Wine
½ cup frozen apple juice concentrate, thawed
Preparation:
Combine sage, salt, garlic, thyme & ½ teaspoon allspice in bowl. Fold double layer of heavy duty foil into 4” square. Push foil thru roast to bottom to cover opening so stuffing won't fall out later. Place roast on rack in large roasting pan. Rub sage mixture over, cover and refrigerate overnite.
Preheat oven to 450. Place pork in oven: reduce to 325. Roast pork for 1 hour and 30 minutes. Fill cavity w/ enough stuffing to mound in center. Continue roasting until thermometer inserted into center of pork registers 160. About 1 hour and 20 minutes. Meanwhile, boil broth in large saucepan until reduced to 1 1/3 cups.
Carefully transfer pork to platter. Pour off fat from pan. Place pan over med-high heat. Add applejack and marsala, bring to boil scraping up any brown bits. Remove from heat. Melt butter in heavy large skillet over med-high heat. Add onion and sauté till tender. Add flour & 1 tsp sage; stir 1 minute. Whisk in reduced broth, applejack and marsala mixture. Boil till thickened to sauce consistency. Stir in 1/8 teaspoon of allspice. Season w salt & pepper.

1 bunch of asparagus
3 cloves of garlic, pressed
4 Tbsp soy sauce
EVOO
Slivered almonds, optional

Clean and blanch asparagus until bright green but still firm. Drain. Put into ice water immediately. Cool & drain. This can be done ahead. Cut into 2" pieces and sauté in skillet with garlic, soy sauce and EVOO. Add slivered almonds if desired.

Balsamic vinaigrette dressing (I use Paul Newman)
Croutons if desired
Preparation:

Preheat oven to 425 degrees. Put all ingredients into Ziploc bag and shake to coat. Let sit on counter for at least 10 minutes, shaking occasionally. Place potatoes in a single layer on a roasting pan or baking sheet. Roast for 20-30 minutes in preheated oven, turning occasionally to brown on all sides.
**Note: You can use basil instead of rosemary if you prefer. Also, add hot sauce to bag if you like spicy potatoes.

Variation: For Au Gratin, place corn in 9- or 10-inch shallow casserole dish, sprinkle with 1/4 cup freshly grated Parmesan cheese, then broil until golden.

1 ¼ tsp baking powder ½ cup dried cherries or cranberries (optional)
¼ tsp baking soda 1 tsp pure vanilla extract
¼ tsp salt 2/3 cup heavy cream
Egg mixture for brushing top of scones:
1 large egg, lightly beaten
1 tbsp granulated white sugar
1 tbsp milk
¼ tsp ground cinnamon
Preparation:
Preheat oven to 400 degrees and place rack in the middle of oven. Line baking sheet with parchment paper. In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt. Cut the butter into small pieces and blend into the flour mixture with a pastry blender or two knives. The mixture should look like coarse crumbs. Stir in the chocolate chips and dried cherries. In a small measuring cup whisk together the heavy whipping cream and Vanilla Extract and then add to the flour mixture. Stir just until the dough comes together. Do not over mix the dough. Transfer to a lightly floured surface and knead dough gently four or five times and then pat the dough into a circle that is about 7 inches round and about 11/2 inches thick. Cut these circles in half, then cut each half into 4 pie-shaped wedges. Place on a baking sheet. Beat egg and milk together. Lightly brush the tops of scones and sprinkle sugar and cinnamon. Bake for about 15-20 minutes or until golden brown. Transfer to wire rack.
