Sausage Apple Stuffing

Ingredients:

1 lb sweet Italian sausage (w/ casings removed)
½ stick butter
5 cups chopped onions (about 3 lg)
2 cups chopped celery
8 cups diced cored Granny Smith Apples
1 Tbsp Sage
2 tsp dried thyme
1 tsp allspice
5 ½ cups herbed cubed stuffing mix (about 10 oz)
1/3 cup chick broth
¼ cup marsala

Preparation:

Saute sausage until cooked thru and crumbled. Using slotted spoon, transfer sausage to large bowl. Add butter, onions and celery to skillet. Saute until onions are tender. Add apples and sauté until tender but still hold shape. Add Sage, thyme and allspice and sauté 1 minute. Add to sausage. Stir in stuffing and mix while adding chicken broth and marsala mixture. Cover & chill. Can be made 1 day ahead.
Put stuffing that dosen't fit in roast in buttered glass lasagna dish and cover w/ foil. Bake @ 325 about 40 mins.

**Note: Mom makes one and a half times the recipe for 8 people.
