Ingredients:
Romaine Parmesan Cheese, fresh shredded
Seasoned Croutons Tomato, diced medium
Vidalia onion, diced Fresh lemon juice to lightly coat romaine
1 cup mayo 9 anchovies, rinsed & drained
1 ½ Tbsp garlic, chopped ¼ cup+ 1 Tbsp fresh squeezed lemon juice
1 Tbsp sherry wine vinegar 1 tsp grainy mustard
½ cup EVOO 1 tsp Tabasco
25 grinds black pepper
Preparation:
Place mayo, anchovies, garlic, lemon juice, vinegar, and mustard in food processor bowl with steel blade. Process until anchovies and garlic are pureed. With motor running, drizzle in EVOO and Tabasco. Stir in black pepper. Refrigerate. Makes about 2 cups of dressing, and enough for 2 heads of romaine. If too thick, add vinegar.
Toss romaine with lemon juice to lightly coat. When ready to serve, add cheese, dressing, tomato and onion; toss. At last minute add croutons and toss.
