Ingredients:
¾ cup sugar
¼ cup cornstarch
¼ tsp salt
2 ½ cups half & half or light cream
½ cup butter
¼ cup brown sugar
1 tsp vanilla
1 tsp cinnamon
9-inch pie shell
Preparation:
In medium saucepan, stir together sugar, cornstarch and salt. Whisk in the half & half and cook over medium heat until mixture is thick and bubbly. Remove from heat and stir in butter, brown sugar and vanilla until butter is melted. Pour into pie shell and sprinkle with cinnamon. Bake at 325 for 30 minutes (the center of the pie won’t be set). Cool on wire rack for one hour. Chill for 3-6 hours before serving. The pie will set up while chilling. Serve with fresh raspberries and whipped cream.
