Ingredients:
¼ cup olive oil
½ cup diced celery
¼ cup minced green onions including some tops
1 ½ tsp. Minced garlic
1/3 cup flour
3 cups half and half
2 cups 2% milk
¼ cup tomato paste
¼ cup dry sherry
1 tsp. Salt
1/8 tsp. Cayenne pepper
2 (8 oz.) pkgs. Chunk style imitation crab, thawed and drained
Snipped green onion tops
Preparation:
In large saucepan, heat olive oil over medium heat; stir in celery, green onions and garlic. Sauté until onions are transparent (about 5 minutes); blend in flour. Cook, stirring constantly, 5 minutes. Slowly whisk in half and half and milk. Continue cooking until thickened (about 10 minutes). Stir in tomato paste, sherry, salt, cayenne pepper and crab. Simmer until heated through (5-10 minutes). Ladle into bowls; garnish with green onion tops. Makes 7 cups.
