Ingredients:
¼ cup honey
¼ cup soy sauce
¼ cup rice vinegar
2 Tablespoons olive oil
2 cloves fresh garlic, crushed
2 teaspoons grated fresh ginger
4 skinless, boneless salmon fillets
salt and pepper to taste
Preparation:
Combine the honey, soy sauce, vinegar, fresh garlic and fresh ginger and olive oil in a small saucepan. Cook over high heat until the mixture reduces by half. Let cool. Preheat broiler. Season salmon fillets with salt and pepper. Brush them on both sides with the honey mixture. Broil the salmon on each side until it is cooked through, about 4-6 minutes on each side, depending on thickness. Drizzle the salmon with the remaining honey mixture and serve. Makes 4 servings.
Note: Salmon may also be grilled.
